Pecan Pie

Pecan Pie

3 eggs, lightly beaten
1 cup corn syrup
2/3 cup sugar
1/3 cup melted butter
1 tsp. vanilla
1 1/4 cups pecan halves (or macadamia nuts)

In a bowl, combine eggs, corn syrup, butter and vanilla. Stir in pecans. Place pastry-lined pie plate on oven rack and pour filling into shell. Cover edge of pie with foil to prevent over-browning. Bake 25 minutes at 350 degrees. Remove foil and bake an additional 20 to 25 minutes or until a knife comes out clean.



Okinawan Shoyu Pork

5 lbs. pork butt, cut into 3-inch cubes
2 cups soy sauce
2 1/2 cups water
1 cup sugar
2 Tbsp. ginger, crushed
1 Tbsp. garlic, crushed
1 Tbsp. miso


Boil soy sauce, water, sugar, ginger, garlic, sake, vinegar and miso until sugar melts. Add pork butt and boil for 10 minutes. Lower heat to medium low and simmer uncovered for 11/2 to 2 hours or until pork is fork tender. Turn meat occasionally.



Fast and Easy Lentil Barley Soup

3/4 cup onion, chopped
3/4 cup celery, chopped
1 clove garlic, minced
1/4 cup margarine or butter
6 cups water
1 can (28 oz.) tomatoes, chopped
3/4 cup dry lentils, rinsed and drained
3/4 cup pearl barley
6 vegetarian, chicken, or beef bouillon cubes
1/2 tsp. dried rosemary, crushed
1/2 tsp. oregano, crushed
1/4 tsp. pepper
1 cup carrots, sliced

Optional ingredients: 1 can corn, 2 to 3 chopped potatoes, string beans or any other vegetable In a pot, cook onion, celery and garlic in margarine or butter until tender. Add water, undrained tomatoes, lentils, carrots, pearl barley, bouillon cubes, rosemary, oregano, pepper and any optional ingredients. Bring to boil, reduce heat and simmer 15 to 20 minutes. Optional: Top with cheese.



Mango Bread

2 cups flour
2 tsp. baking soda
2 tsp. cinnamon
1 egg, beaten
3/4 cup vegetable oil
1/2 tsp. salt
11/4 cups sugar
1 tsp. vanilla
3 eggs
2 cups diced mangoes
1/4 cup chopped macadamia nuts
1/2 cup shredded coconut


Preheat oven to 350 degrees. Sift flour, salt, soda and cinnamon together. Make a well in dry ingredients and add eggs, oil, vanilla, sugar, nuts, coconut and mangoes. Mix well. Put into a well-greased loaf pan. Let stand 20 minutes before baking. Bake for 1 hour.



Easy Chicken and Broccoli Alfredo

2 cans cream of chicken soup
Fettuccini or linguini pasta
1/2 cup Parmesan cheese
2 pkg. pre-cooked chicken
1 head of broccoli, cut into bite-size pieces
Basil to taste
Pepper to taste

Boil pasta; drain and set aside. In a deep pan, heat cream of chicken soup, broccoli, chicken, Parmesan cheese, basil and pepper. Add cooked pasta. Top off with more Parmesan cheese if desired.
